18 to 24 January 2010 What is Xató? The xató is a traditional dish of the cuisine of the Penedès region naturally formed by the Catalan region of Alt Penedès, Baix Penedès and Garraf, between Barcelona and Tarragona, next to the Mediterranean, and internationally known for its wines and Cava and its outstanding tourism.
Basically, the xató is a winter salad of escarole basis that is accompanied by other ingredients such as anchovies or anchovy, cod and tuna dessalats and esqueixats and The difference, however, between the different ways to prepare xató lies in its sauce, a sauce that varies depending on the area and has a base of almonds and hazelnuts-except Xató Vilafranca, nyoro, garlic, oil, wine vinegar and salt.

King Peter III of Aragon died while staying at the royal palace in Vilafranca in 1285.
