What is Xató?
The xató is a traditional dish of the cuisine of the Penedès region naturally formed by the Catalan region of Alt Penedès, Baix Penedès and Garraf, between Barcelona and Tarragona, next to the Mediterranean, and internationally known for its wines and Cava and its outstanding tourism.

 Basically, the xató is a winter salad of escarole basis that is accompanied by other ingredients such as anchovies or anchovy, cod and tuna dessalats and esqueixats and  The difference, however, between the different ways to prepare xató lies in its sauce, a sauce that varies depending on the area and has a base of almonds and hazelnuts-except Xató Vilafranca, nyoro, garlic, oil, wine vinegar and salt.

Festival Xató Vilafranca del Penedès is held the third week of January and it is a very crowded party for being an authentic and unique displays of the five varieties of officers prepare this popular dish.
 So when others such as the popular "Xatonada" El Vendrell and Vilanova, concentrate on the taste of their respective xató in Vilafranca del Penedès people can choose between four xatons the Sant Pere de Ribes, the in Sitges, Vilanova, the El Vendrell and Vilafranca
 
 
 
 
 
Vilafranca del Penedès, or simply Vilafranca, is the capital of the comarca of the Alt Penedès in Catalonia, Spain.
The town was founded in the middle of the twelfth century as a result of the decline of Olèrdola, which had been until then the main local centre. It was established as the seat of a vegueria in 1304. The Corts were held in the town in 1218 under King James I of Aragon, and again in 1358–59 and in 1367. King Peter III of Aragon died while staying at the royal palace in Vilafranca in 1285.
